My wife recently tried a recipe she found on ‘Jo Cooks’ dot com, called ‘Magic Cake’ ~ and it turned out just as advertised. This was the most amazing baking experience, as the batter is very thin and not cake-like at all, and in fact, reminded me more of a thin pancake batter than a cake batter.
The ‘magic’ part of this recipe is that the cake is baked in an 8″ square baking pan, and a middle layer of luscious custard filling forms by ‘magic’ during the baking process. The custard reminds me of the filling used for a cream-filled donut, so you get the idea! 🙂
The Magic Cake rose above the height of the baking form and achieved a nice golden color while baking, then collapsed a bit while cooling – and the custard middle formed as advertised. Our preference was to eat this cake slightly chilled, because we like a chilled custard filling. The cake texture of the upper layer and edges of the cake reminded me of a soft sponge or Angel Food cake, very tasty and well worth trying out ~ enjoy! ☼ 🙂
